Easy Lunch Recipes


Lunch is often overlooked in terms of its importance as a meal. Most people are too busy in the morning to fix their own lunches and so make do with junk food. However there are some easy lunch recipes available that will help you to get your lunch organized quickly each day. Do not skip lunch, no matter how busy you are. You will be depriving yourself of essential vitamins and nutrients.

Studies have also shown that people who skip lunch or who eat junk food at this time are more prone to health problems such as obesity, diabetes and so on. Try out any one of the easy lunch recipes given below. Also spend some time every week stocking up on the ingredients of these easy lunch recipes so that you can save time later on while preparing them.

Some easy recipes for lunch include:-

Chicken Munch (Serves 4):

Ingredients: 

  • 4-8 chicken tenders (skinless and boneless)
  • 1 beaten egg white
  • 1 cup of cereal, ground
  • Sauce for dipping (mustard or ketchup)
  • Non stick cooking spray
Preheat your oven to 375 degrees. Add salt, pepper and garlic powder to the crushed cereal. Now dip the chicken tenders in egg white and then roll them in the crushed cereal. Spray a baking tray and the tenders with the cooking spray. Bake the chicken for about 30 minutes. After 15 minutes of baking, turn the tenders over so that they get browned on both sides. Use the sauce for dipping. This easy lunch recipe is sure to be a favorite of the whole family.

Easy other lunch recipes also include the Ripe Olive Tuna and Artichoke Salad. This recipe is as follows:

Ingredients:

  • 1 cup of chopped artichoke hearts
  • ½ cup chopped olives
  • 2 teaspoons lemon juice
  • 1/3 cup mayonnaise (reduced fat)
  • 1 ½ teaspoon chopped oregano
  • 1 can of chunk light tuna (12 oz can, drained and flaked)
Combine all of the above ingredients and your lunch is ready.

The two quick and easy lunch recipes given above are made in just a few minutes and are very filling. They are also healthy lunches which will please the entire family. There are also some easy lunch recipes for kids that can be made quickly. For instance, liven up the usual sandwich lunch by experimenting with different fillings and cutting the sandwiches into different shapes. You can even try a vegetable or pasta salad so that your kids eat vegetables.
